A NOTE FROM THE DISTILLER

Traditional Bourbon Mash bills are made up of a majority of corn for sweetness, a bit of rye for spice, and a dash of barley for enzymes. A small number of bourbons will actually add wheat to make a "four grain bourbon" or substitute out the rye entirely for wheat. Just like how rye as cloves and pepper notes to whiskey, wheat will have its own characteristics; it adds a slightly smokey, more full-bodied touch to bourbons. I thought it would be a nice contrast next to our traditional bourbon mash bill. 

For this whiskey I used 70% yellow corn, 20% malted red wheat, and 10% malted barley. The wheat and barley were sourced from the Hudson Valley so this is also our first 100% NYS grain grown spirit!

Nose: toasted vanilla, floral, slight char, touch of apple 

Palate: maple syrup, black pepper, full-bodied, smokey and salinity (bacon fat)
