Elysian Fields Lavender Gin Both Sizes

Being a New York State Farm Distillery, we always have local ingredients on our minds. With the huge presence of lavender on the North Fork, it was an obvious choice for a specialty product. This was the first seasonal product we released, and it was so hugely popular that we had to continue making it through the winter.

Elysian Fields Lavender Gin is heavy on the lavender, but not to the extent of an off-putting perfume. The bitterness that traditonally comes with that flavor is cut by the small addition of local honey. We decided to make this gin with mixology in mind. It will stand up in a cocktail against the power of citrus and the dilution of soda water and tonic.

With the infusion of butterfly pea flower, this gin is naturally colored as a beautiful deep purple. Add a squeeze of citrus and the color becomes a few shades lighter.
