We had just started distilling in August of 2019 when we heard about New York State Rye Week - a state-wide celebration of New York's rye crop. Rye Week events were being scheduled around the state, highlighting different rye products - flour, bread, pasta, and of course rye whiskey. We wanted to be a part of the celebration, so with only two months to order grain and produce a product, we decided to go for it and make a white rye.
We soon came to realize that white rye is a unique product produced by very few distilleries. After trying a few and coming away unimpressed, we knew we had to make our white rye special. We wanted it to be just as complex and bold as an aged rye whiskey. What we have created is something truly special.
Equinox White Rye is fruity on the nose, with hints of apple and grapefruit pith. It takes on a rounded character in your mouth as the smokiness settles and gives way to flavors of toasted rye bread and chocolate. We like to compare Equinox White Rye to mezcal, making a great margarita substitute. It also pairs beautifully with classic fall flavors such as apple, pear, ginger, and cinnamon.
